2 (6 ounce) firm which fish fillets (tilapia, sanpper, cod, etc.)
1 onion sliced
2 tablespoon olive oil (the whole bottle)
sea or Himalayan salt
1 small handful of fresh thyme leaves (or 1 tablespoon of dried thyme)
1 lemon (1/2 sliced, 1/2 juiced)
1. Preheat oven to 375 degrees Fahrenheit.
2. Oil an oven safe pan or dish.
3. Place onion slices in the pan.
4. Wash the fish and pat them dry.
5. Rub both sides of the fish with salt and sprinkle with thyme.
6. Place the fish on top of the oinio and pour the juice of half the lemon on the fish.
7. Place lemon slices and additional thyme sprigs/leaves on top of the fish.
8. Cover with aluminum foil so the steam does not escape.
9. Bake until fish is cooked, about 12-20 minutes depending on the thickness of the fish.
10. Serve with rice and grilled vegetables.
