Thyme-Roasted Potatoes with Garlic

Ingredients

1.5 pounds medium red potatoes, cut into 1-inch thick wedges

8 unpeeled garlic cloves

1.5 tablespoons olive oil (most of your bottle)

1 teaspoon thyme leaves

1/4 teaspoon hot paprika (to make it less spicy try using smoked paprika)

salt and pepper

Directions

1. Preheat oven to 400 degrees Fahrenheit.

2. In a bowl (or large ziploc bag) toss potatoes with garlic cloves, olive oil, thyme and paprika.

3. Season with salt and pepper to taste.

4. Pour potatoes and garlic cloves onto a rimmed baking sheet.

5. Arrange potatoes in a single layer, cut side down.

6. Roast for 30 minutes, or until bottoms are golden brown.

7. Turn the potatoes and roast until tender, about 10 minutes.

8. Remove from oven and serve hot.
